Asparagus tart with gorgonzola and almonds

It will take you about 45 minutes to prepare this awesome tart. You can make your own puff pastry, but if you are suffering from constant lack of time (like I do), don't hesitate and use a ready to buy, good quality one. It will save you a lot of work and time and the result still will be stunning.

Makes 3 servings

  • 1 package puff pastry
  • 15 pieces green asparagus (hard parts removed), cut in half lenghtwise
  • 2 eggs, beaten
  • 3 tbsp sour cream
  • 50 grams gorgonzola cheese
  • 20 grams almond flakes, toasted on a dry pan
  • salt, pepper to taste
  1. Heat the oven to 180 C degrees  (no fan).

    Line the baking sheet with baking paper.

    Place the puff pastry on a baking sheet. Using the blunt side of your knife, make a shallow cut around the puff pastry (about 1,5 cm from its edges). Prick your pastry with the fork and smear with beaten eggs.

    Bake for about 15 minutes until the edges rise and pastry golden a bit.

    Mix sour cream withe the remaing eggs. Season with salt and pepper.

    Remove the pastry from the oven. Place asparagus alongside one another. Pour the cream and egg mixture over the asparagus. Place gorgonzola pieces on top.

    Place in the oven for about 15 minutes more.

    When ready remove from the oven and sprinkle with almond flakes.

Recipe Notes

You can serve this tart hot, just after baking or in a room temperature.


It will be perfect for a picnic or as a delicious treat to your lunch box.
