Inspired by Nigella's mandarin cake I've decided to use my macerated kumquats for sweet bake.
The cake is extremely quick and easy to make. It is sweet, very moist with strong citrus flavour.
The whole house smells so great while baking, so it is almost impossible to resist and not to eat at least half of it while it is still hot.
For 21 cm springform
- 200 grams macerated kumquats (or 4-5 mandarins or 3 oranges)
- 200 grams minced almonds
- 200 grams sugar
- 1 tsp baking powder
- 5 large eggs
Preheat the oven to 190 degrees C (no fan).
Place the kumquats in a food processor and blend until smooth. If you are using mandarins or oranges cook them first until soft and then blend for a smooth paste.
Butter the springform and pour it with the fine bread crumbs. Line the bottom with baking powder.
Pour the batter into a springform and place into a hot oven. Bake for 50 minutes to 1 hour.
When ready, cake is golden outside but still very moist inside.
Leave it in springform till cool completely.
Just before serving dust the cake with icing sugar or make the frosting using icing sugar and lemon/orange juice.
