These cookies are just perfect. Very easy to bake, look fantastic, taste great and stay fresh for at least a week. I highly reccomend to bake them not only for Christmas, but for any other occassion- they will be also great with your everyday coffee.
You need to make a dough in advance- the best is to prepare it the day before and chill overnight.
Makes about 40-50 cookies
- 100 grams butter
- 150 grams dark chocolate
- 4 eggs
- 2 pinch salt
- 1,5 cup sugar
- 1 tbsp cinnamon
- 2,5 cups all purpose flour
- 2 tsp baking powder
- 1 cup powdered sugar to coat the cookies
- 1 orange (big), zest grated finely
Place chocolate and butter in a bowl and melt them in a water bath until combine. Set aside to cool.
Beat eggs with sugar and salt for about 5 minutes and then add melted butter and chocolate. Mix everything until well combined.
Combine flour with cinnamon and baking powder.
Add these dry ingredients to eggs & chocolate. Add orange zest and mix everything until combine.
Cover the bowl with plastic wrap and place in the fridge for at least 3 hour, or overnight the best.
Preheat oven to 180 degrees C (no fan).
Line baking sheets with parchment paper.
Dust your hands with powdered sugar before forming a cookie balls. Each ball should be a walnut size (22- 25 grams). Cover the balls with powdered sugar quite generously.
Place the balls on the baking sheet. You can bake about 16 balls at one time (4 pieces in 4 rows)
Bake the cookies for about 11 minutes. Remove from the oven. Leave the cookies on a rack until they cool down completely.
When cookies are hot, they are very soft. They will harden when they cool down.
Cookie dough freezes nicely. If you use defrost one, you need to prolong the baking time for 2-3 minutes.
