
It was love from the first sight. When I found this recipe on a Tieghan's www.halfbakedharvest blog I knew, that I had to try it out. And the final result just blew my sock off.
This dressing is delicious just the way it is, but if you drizzle it over crumble feta it will take you to a whole new dimension.
It is just indecently addictive. Try this combo and your taste buds will go mad. You will thank me later for this recipe.
- 1/2 cup olive oil
- 1 and 1/2 cup small cherry tomatoes
- 3 cloves garlic, finally chopped
- 1/2 tsp chili flakes
- 1 lemon
- 1/2 tsp dry oregano (or 1 tbsp is you use the fresh one)
- pinch sea salt flakes
- 400 grams feta cheese
- pinch freshly ground black pepper
- fresh rocket, for serving
- bread, toast or pita for serving

Take the rind of 1 lemon, and slice it into fine julienne.
Heat a medium skillet over medium heat.
Add the olive oil, tomatoes, chili flakes, lemon rind, oregano, salt and pepper. Cook for about 10 minutes, until tomatoes just begin to burst. Add garlic at the end of cooking. Remove from the heat and let it cool slightly.
Crumble the feta into a serving plate. Drizzle the tomatoes and olive oil over feta. Top with fresh rocket leaves or other herbs according to your choice (dill, chives, basil).
Serve with bread, toasts or pita for scooping. Enjoy!!!
