This is one of those dishes which is quick, easy and pleasant to make and which your family will love to eat. You will prepare it on a one big pan so not much cleaning is another advantage. I often prepare this pasta for my kids and since I've started adding bacon my husband also loves to eat it 🙂
Makes 3-4 servings
- 300-400 grams spaghetti
- 200 grams broccoli, cut in smaller pieces
- 1 onion, finelly chopped
- 3-4 cloves garlic, finelly chopped
- 250 grams mascarpone
- 2 hadndfull baby spinach
- 20 grams pine nuts, toasted
- 200 grams smoked bacon, cut in fine stripes
- 1/2 tbsp oil
- 1/2 tbsp butter
- 3/4 cup frozen peas
- grated parmesan, to finish the dish
- salt, black pepper and nutmeg to taste
Boil water in a pot. Put some salt in it. Cook broccoli for 3-4 minutes until soften but still fim, Drain and set aside.
On a big pan heat oil and butter.
Add onion and fry a while until translucent. Add bacon and fry everything together until bacon is gold and crispy. If your bacon is very fatty remove some fat from the pan.
Boil some salty water in a big pot. Cook your pasta accordingly to instruction, making sure it is still al dente.
Add garlic to the pan with onion and bacon.
Add mascarone cheese and mix it through. Add some pasta water to get a nice, not very thick sauce.
Add broccoli and peas. Cook for a few minutes until broccoli are soft and peas are cooked.
Add spinach and mix everything.
Season your sauce with salt, pepper and freshy grated nutmeg.
Drain your pasta, saving some of cooking water.
Add pasta to the pan with the sauce. Mix it through until well coated. Add some more water if the sauce is too thick.
Top the pasta with roasted pine nuts and grated parmesan.
