
This dish holds a very special place in my heart. It brings back great memories from a very beautiful time in Macedonia, where we tasted it for a first time.
Peppers in Macedonia are the best: full of sun, sweet, fragrant. They don't need much to shine.
And simplicity is a key in this dish. You need only a few popular and great combined ingredients to hero this beautiful product. Boom! In every bite you will find everything, what you need: sun, relax, vacations, summer... It is what this dish is all about.
Makes 4-6 servings
- 5-6 bell peppers
- 4 chile peppers
- 3-4 cloves garlic, finely chopped
- 1 bunch parsley, roughly chopped
- 100 grams feta cheese
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt, black pepper to taste

Heat the oven to 220 C degees (grill). Line the baking sheet with baking paper.
Coat the bell peppers and chilies with olive oil and sting with the tip of a knife. Place on a baking sheet and put it in the oven under the grill, until the skin turns black. While grilling turn the peppers a few times so they char evenly from each side. It will take about 15 minutes.
You can use your barbecue or gaz burner, to char the peppers but using gaz burner is the most time consuming method.
When the peppers are done, transfer them to the big bowl and cover the bowl with plastic wrap. Leave the for about 15-20 minutes until they cool down.
Remove the skin and the seeds and divide the peppers into chunks. Peel the chilies and chop them rougly.
Place the peppers and chilies on a serving plate. Season with salt (remember that feta cheese is salty), and black pepper.
Sprinkle with chopped garlic and parsley. Pour some olive oil and balsamic vinegar on top. Crumble some feta to finish the dish.
Serve with a piece of fresh white bread or baguette and your favourite red wine.
The measurements given here are approximate. This is a very simple, rustic dish, cooked for your family and home-dwellers.
When they cook in Macedonia they don't use scoops or kitchen scales. They cook with heart, and great taste is what counts the most. Try this method.
