Apple rice pilaf with pecans, cranberries and chicken tights

You can believe me- this pilaf is just delicious. This is a perfect Sunday family meal, which you can even serve to your guests. It is so easy to make, doesn't require much time nor work, and you will get a beautiful and rich flavour in return.

Since I've got at home serious meat eaters I've prepared a version with chicken tights. But you can easily make it without any meat, and it will still be a fullfilling and satisfying dish.

Making 4 servings

  • 2 cups colorful rice
  • 1 and 1/2 cup apple juice
  • 2 and 1/2 cup chicken stock
  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1/2 apple, finely diced
  • 1 tsp dry thyme
  • 1/2 cup pecans, roughly chopped
  • 4 tbsp green parsley
  • 1/2 cup dry cranberries
  • 1/4 cup frozen cranberries
  • salt, pepper
  • oil
  • 8 chicken tights, optional
  1. Heat a little bit of oil on a big non stick pan.

    Place marinated chicken tights skin side down and fry them about 10 minutes until brown and nicely crunchy. Turn around and fry the other side another 10 minutes. Remove from a pan and set aside.

    Remove some of the fat from a pan if it is too much.

    Add onion and fry it for a while until translucent. Add garlic and stir.

    Add rice and stir everything. Fry for a few minutes until all rice grains are covered with oil and lightly translucent. Add dry thyme and stir everything.

    Add a cup of apple juice and a cup of stock. Stir.

    Place chicken tights on a rice skin side up. Make sure the skin is not covered with liquid.

    Cover the pan and cook the rice on a small/medium heat until it soaks all the liquid. Add another part of juice and stock.

    Add dry and frozen cranberries.

    Keep adding juice and stock until rice is cooked and tender and chicken is cooked all through.

    At the last stage of cooking add finely chopped apple and pecans.

    Season with salt and pepper. Sprinkle with green parsley.

    Serve hot. Enjoy!

Recipe Notes

If you want to prepare a meatless version of this dish just skip the first stage and start with softening an onion and garic on a little bit of oil. Use a veggie stock.

If you are using chicken rub the tights with salt, black pepper, sweet and spicy paprika, dry thyme and a pinch of cumin.
