Kumquats macerated in Martini and white wine

These kumquats for me will always associated with my dearest Friend Eliza. During my trip to Warsaw, where finally I had a chance to meet her in a real life, I ate the most expesive salad in my life with kumquats prepared that way.

At the end the bill did not matter at all. The company was great and the salad - simply delicious. On top of that we forced Chef to reveal us his secret of preparing these orange jewels.

If you have a chance to buy kumquats, do not hesitate. They only need a little love, attention and alcohol to shine and transform into a true rarity.

  • 400 ml Martini
  • 400 ml white wine (dry or semi dry)
  • 400 grams kumquats
  • 1 cup sugar syrup
  1. Pour Martini and white wine into a pot with thick bottom. Stir. Cook on a medium heat until the liquid reduce to 1/3 of its initial quantity.

    Add sugar syrup and stir.

    Add kumqutas, reduce the heat and cook for about 30 minutes until the liquid thicken and kumquats are soft.

    Pour the liquid and kumquats to a jar. Set aside for at least 12 hours.

Recipe Notes

To prepare sugar syrup cook 1 cup of water in a pot. Add 1 cup of sugar and cook for 3-4 minutes.


You can add a few drops of lemon juice to enrich the flavour.


Pour the syrup into a bottle  and keep refrigerated. The syrup is perfect for making drinks and lemonades.
