Tarts with grains and dried fruits are an awesome option for healthy and delicious breakfast. With a dash of yoghurt and some fresh fruits they are a complete and balanced meal. You can easily prepare them in advance and freeze. A night before just remove them from the freezer and let them sit on a table. In the morning they will be fresh and ready to be filled with yoghurt and your favourite toppings- fruits, nuts, chocolate. I highy recommend to make them for kids- they can play with toppings and prepare their favourite combo. I assure you these tarts will be devoured till the very last crumb.
Makes 4 tarts (12cm size)
- 1 cup rolled oats or spelt oats
- 1 cup puffed millet
- 1 cup pecans
- 1 tsp cinnamon
- 1/4 cup dates
- 1/4 cup coconut oil, liquid
- 1/4 cup maple syrup
- pinch of salt
Soak dates in hot water until soft. Drain.
Preheat oven to 190 degrees C (no fan).
Mix oats, pecans, cinnamon, salt and drained dates. Blend shortly.
Add runny coconut oil, maple syrup and mix everything until everything is well combined.
Add puffed millet and mix the mixture with a spoon, watching not to break the grains.
Put the mixture into a tarts forms and line the bottom and sides using your fingertips. The layer should be about 0,5-1 cm thick.
Place the tarts into a hot oven and bake for 16-18 minutes until nice and golden.
Remove from the oven and let it cool down.
Mix the yoghurt with honey and lime juice- adjusting the amount accordingly to your taste.
Fill the cold tarts with flavoured yoghurt and top them with fresh fruits. Sprinkle with grated lime zest.
