Turkey tights in home made teryaki sauce made on a base of blackcurrant juice and honey

This dish perfectly reflects my cooking style. It is a great proof that everyday cooking doesn't have to be plain and boring. You can easily prepare something easy and delicious, without spending hours in the kitchen.

I used turkey tights here, but you can successfully replace it with chicken.

Even if you are not very familiar with Asian inspired cooking, I higly reccomend to get some of Asian pantry products which you can use in your everyday cooking to take some of your simple, local ingredients to a whole new level of flavour.

Makes 4 servings:

  • 4 turkey tights
  • 3 onions, cut in quarters
  • 1/4 cup rice vine
  • 1/2 cup light soy sauce
  • 4 tbsp honey
  • 1/2 cup blackcurrant juice
  • 1/2 cup water
  • 1 lime, juice
  • 2 cloves garlic, finely chopped
  • 2 tsp fresh ginger, finely grated
  • fresh corriander leaves, or green parsley for decoration
  • fresh chilli, to garnish (additionally)
  1. In a small bowl mix all ingredients for your dry rub: sweet pepper, 5 spice blend, salt and chili flakes.

    Pat dry the turkey tights and rub them evenly with the dry mariade. The best is to do this one day ahead but if you don't have time try to do this at least half an hour before putting the meat into the oven.

    Preheat the oven to 180 C degrees.

    In a saucepan place: rice vine, soy sauce, honey, blackcurrant juice, water, lime juice, garlic and ginger. Stir. Cook the sauce on a low heat until thicken and reduce a little bit.

    Place the turkey tights in a roastig dish. Pour the sauce over the meat. Place the onions next to the meat.

    Place the turkey in the oven and roast until the meat is tender and fall of the bone. Pour the mariade over the meat every 10-15 minutes.

    Roasting time depends on the size of the tights. I roasted mine for 1 hour and 20 minutes. The best is to check while roasting if the meat is tender.

    Remove the excess of a fat from the surface of the sauce. Pour the rest of the sauce into a small saucepan and cook it over a medium heat until thicken. For more silky consistency you can mix in a small amout of cold butter but it s not necessary.

    Sprinkle the tights with fresh corriander or green parsley leaves. Serve with potatoes, rice or dumplings with sauce on the side.

    For the extra kick you can sprinkle the meat with fresh chili.


Recipe Notes

I served my turkey tights with fried buckwheat groats with veggies.

Here is the recipe:

(makes 4 servings)

200 grams of buckwheat groats

1/2 onion

1 clove of garlic

1 tsp of finely grated ginger


1 cup of white cabbage, finely shredded

1/2 cup of red cabbage, finely shredded

1/2 sweet red pepper

1/2 sweet orange pepper

1/2 cup frozen green peas

1-2 tbsp light soy sauce

1 tsp sesame oil

Fresh corriander or green parsley leaves

1 tbsp oil


Cook the buckwheat groats accordingly to the instruction. Drain and set aside.


Heat the oil on a pan. Add onion and fry it until translucent. Add ginger, garlic and fry everything for a short while. Add the veggies and fry everything until veggies are nice an soft.


Add the buckwheat groats and mix it with the veggies. Add soy sauce and sesame oil.


Mix everything and check the seasoning. Sprinkle with corriander or fgreen parsley leaves.



Serve with the turkey tights or you can serve it as a regular vegetarian meal.
