Green beans in a spicy tomato sauce with fried breadcrumbs and garlic chips

I higly recommend this dish to any green beans or spicy dishes lover. The flavours are bold and rustic. The dish is quick to make, can be prepared in advance and enjoyed hot or in a room temperature. Always tastes great, always will please you.  Big thumbs up!!


Ingredients
  • 0,5 kg green beans
  • 3 slices stale bread, crumbled
  • 3-4 tbsp oil
  • 6 cloves garlic
  • 1/2 onion medium, chopped finely
  • 1 can tomatoes (whole not chopped)
  • 1/2 tsp salt
  • 1/2 tsp dry basil
  • 1/2 tsp dry oregano
  • 1/2 tsp sugar
  • 1/2 tsp red chili flakes
  • black pepper
  • dash of water
  • lemon zest, finely grated
  • fresh basil leaves, to finish the dish
Instructions
  1. Heat oil on a big pan.


    Slice thinly 3 garlic cloves. Fry them on a pan until they are fragrant and slightly golden. Watch out not to burn them as they will go bitter. Remove from a pan and drain on a paper towel.


    Put the bread crumbs on the same pan and fry them until they are crunchy and golden from all sides. Remove them on a plate and season with a bit of salt.


    Put a little bit more oil on a pan. Add onion and fry until soft and translucent. Add 3 remaining garlic cloves, chopped finely.


    Add tomatoes and a dash of water. Cook them for a while- they should stay in a bigger chunks.


    Meantime, boil water in a big pot. Add salt and a bit of sugar. Cook green beans until soft but still all dente. Drain.


    Season your sauce with dry herbs, salt, sugar, chili flakes and black pepper. It should be garlicy and quite spicy.


    Add your greens to the sauce and mix everything to cover the beans. Transfer them on a serving plate. Add the rest of the sauce on top.


    Sprinkle fried breadcrumbs and garlic chips on top of the beans.


    Finish the dish with freshly grated lemon zest and fresh basil leaves.


    Serve hot or in a room temperature.
