Fit cake with plums

I must admit that preparing fit desserts and cake is not usual situation in my kitchen. I prefer to eat sweets less often but if I do- I do not count calories.

But I couldn't stop thinking about this cake. I saw it on several Instagram accounts and every time it looked so yummy and tempting. Well, there are versions with blackberries, raspberries, and any other berries you can think of. And here is mine- fit cake with plums.

Although the recipe is not mine, it is so tasty and so easy to make, that I want to share it with you. And if I tell you that this cake is so low in calories, that you don't have to feel bad about eating seconds, you will probably thank me for this recipe.

So bake it and spread the good news.

Makes the form 20cm x 20cm

  • 100 grams spelt flakes (or oat flakes)
  • 100 grams spelt flour (or oat flour)
  • 20 grams coconut shreds
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • 3 tbsp coconut oil (liquidy)
  • 7 tbsp milk
  • 1 tsp baking powder
  • 500-600 grams plums
For the crumb:
  • 100 grams spelt flakes (or oat flakes)
  • 60 grams coconut oil (hard)
  • 2 tbsp brown sugar
  • 30 grams coconut shreds
  1. Heat te oven to 180 degrees (no fan).

    In a larger bowl combine all dough ingredients. Set aside for 10 minutes.

    Cut plums in a smaller dice (if you are using some soft fruits like any kind of berries, smash half of the fruits with fork and leave the other half whole).

    Mix all crumb ingredients forming crumbs with your fingers.

    Layer the form with baking paper. Transfer the dough into the form and press it to the bottom.

    Top it with plums (if you are using soft fruits, put the mashed ones first and then the whole ones).

    Top fruits with the crumbs.

    Bake for about 45-50 minutes, until golden.
